The Liver’s Burden: How Modern Diets Are Fueling a Health Crisis

Modern diets are placing an unprecedented burden on the liver, fueling a crisis of fatty liver disease, says a Harvard-trained gastroenterologist. He identifies three pillars of the modern diet that are particularly harmful. The first is the high consumption of sugary drinks. Calling them “liquid poison,” the doctor highlights how sodas and juices deliver a concentrated shot of fructose to the liver, leading to fat synthesis and storage, which is the foundation of fatty liver disease. The second pillar is the prevalence of deep-fried foods. These items are rich in unhealthy fats that not only contribute to obesity but also cause direct inflammation and fat accumulation in the liver, pushing it towards disease. The third pillar is the reliance on ultra-processed foods. Convenience items like chips, hot dogs, and sugary cereals strain the liver with a mix of artificial additives, unhealthy fats, and added sugars, while also disrupting the gut-liver axis. The expert’s analysis shows that this health crisis is a direct consequence of our food environment, and change must begin with avoiding these three categories.
